My mother-in-law gave me one the other day and I was so surprised that even with nuts, I liked it. =)
- 1 box plain white cake mix
- 2/3 c. vegetable oil
- 1 egg
- ½ tsp. almond extract
- 1 c. chopped nuts (she used pecans)
Makes 3-3½ dozen.

I've done cookies like this and my kids LOVE them.
I'm a big fan on the Anne Byrn "Cake Mix Doctor" cookbooks. I highly recommend her books!
I'll have to look up her books. My youngest daughter loves to bake. She now wants to make these with chocolate cake mix -- I think that'll be awesome! =)
